Not long ago, the fine folks at acclaimed restaurant, Brae, were looking to develop a custom wardrobe for their front-of-house pros. We took a roadtrip to see the results of our collaboration at Brae's impressive grounds near Victoria's Otway Ranges.
Set on a gentle hillside in Birregurra, nature and seasonality reign supreme here. Words like 'ethical', 'local', and 'sustainable' aren't just buzz words, they're a raison d'etre. The restaurant overlooks Brae Farm where organic principles and regenerative farming techniques produce fruit and veggies, nuts, honey, and wheat grain. The ever-changing menu uses ingredients from Brae Farm, the surrounding land, and nearby producers. Specially designed guest suites are available for overnight stays, and pathways entwine the grounds with signage and info to reacquaint visitors with the life and story of their food.
Brae has garnered countless honours, including Three Hats and an appearance on The World's 50 Best Restaurants list.
